a salad {for the fall}

with the weather cooling down, salads have not been my go-to in the recent weeks.  that is, until i saw a recipe for one that just screamed fall.  i  zhushed it up a bit, and i gotta say, it was really good…even on a cool day.

combine these ingredients to your little heart’s content, and i promise you’ll be one happy camper…

salad

  • spinach
  • apples
  • almonds or pecans
  • feta or blue cheese
  • craisins

dressing – combine equal parts oil and vinegar to lightly dress your salad

  • olive oil
  • balsamic vinegar
  • salt and pepper

we’re in the new house {and i’m coming up for air}

note to self:  moving is a pain in the ass.  and setting up shop at a new house comes with a lot of no fun little things – getting cable and internet after days without, dealing with unforeseen house issues, and tending to projects that need quick resolution – but we are so so happy to be here.

before i go any further, let me pause for a moment and tell you how instrumental our families have been during this process.  we couldn’t possibly say enough thanks for the time, energy, and sweat they have donated to us.  they are amazing, and family, i’m publicly worshipping you for all you have done!

let’s start at the beginning.  we moved 12 days ago, on the only day in months that we have had torrential downpours.  thankfully, mother nature seemed to let up at the right intervals for loading and unloading, but it was a little challenging and messy to work around.  it was so bittersweet to leave a home that we absolutely loved and had put so much into, but we know this next house will be good to us and we will be able to create memories here for many years to come.  we are slowly getting settled in, and while we still have a lot of packed boxes, our main living spaces are somewhat in order.  i’m really looking forward to never seeing a brown box again and getting to a place where we can think more about decorating this new home – the fun part!  as i mentioned before, it’s pretty beige around here right now.  can’t wait to take you along for what we have planned.

the two i was most concerned about, beckett and miller, have adjusted with flying colors.  i think that since their toys have reappeared here, they are fine with the relocation.   miller still has a great yard to romp around in, and beckett (and we) couldn’t be more pleased with the outdoor situation – a swingset that was already here, and a nice flat driveway for bike-riding, basketball-playing, and bug-catching (yes, he is a boy through and through).

we’re moving! {probably}

when i mentioned last week that we had another big project brewing, i wasn’t kidding – we’re moving!  this has been the craziest, most whirlwind of a thing, and we weren’t even planning on it.  bonkers, right?  so, here’s the story.  my dear sweet husband is what you might call a real estate stalker, and he looks online on a nearly daily basis.  he’ll send me a few links weekly, but nothing was really enough for us to make a move.  then one day he sent me a link to a house that stopped us in our tracks.  we went to an open house that sunday, made a second visit wednesday, and our house was on the market the following week.  we knew that our current house wasn’t our ‘forever home’ and that we probably wanted to get planted somewhere more long-term before beckett started school, so we really just sped up our timeline a bit.

so, our house went on the market on a thursday morning, and we had a request for a showing within a few hours.  over the next 3 days, our house was shown 6 times, and sunday morning, we had an amazing offer on the table.  really, we thought this stuff only happened in the movies – certainly not to us – certainly not in this market.  in the middle of this, we made an offer on the other house.  the stars seemed to be aligning.  the sunday that we got the offer on our house, we spent the entire day negotiating back and forth on both houses and probably spoke to our agent 20 different times.  coincidentally, it was our wedding anniversary – we were sweaty and dirty from getting the house show-ready, tired and stressed out – cute!  we came to terms on both houses by the next day and breathed a little sigh of relief.  just recently, we got through the inspections and appraisals and breathed a much bigger sigh of relief.  we haven’t signed anything yet, so the move isn’t set in stone, but if all goes according to plan, we’ll be moving in about three weeks.  whew!  are you still reading?

so all this has me thinking about projects to tackle, new rooms to make our own, and how we can do it (well, some of it) before we welcome #2 in late january.  the house is quite updated, but the finishings aren’t necessarily the things we would have chosen.  right now, things are beige, beige, beige, and as you might know, that is so not us.  we’re really excited to get our stuff inside and see how things are looking and then to start making a project punch list.  i’ll be sure to keep you updated along the way, and thanks for your patience as my posts may continue to be sparse for a while.

oh baby {it’s a …}

last week we had an ultrasound of this little booger.  most importantly, baby appears to be healthy.  all the important parts are there and working, and we are so happy and relieved about that news.  when i was pregnant with beckett, we decided we wanted to keep the sex a surprise.  it was a great decision, and an incredible moment when he made his debut.  jared had been sure he was a girl all along, but my money had been on a boy.  i remember saying ‘hi beckett’ as soon as they handed him to me.  it was a sweet moment.

this time, we decided to try something new and find out who this little person is…

turns out, it’s a girl!  we are thrilled to be adding a little girl to our family, and i’m so happy we found out.  this time around, i feel much more distracted, and it’s definitely helping me to connect a little more.  also helping is that she is starting to kick around quite a bit, and jared felt his first few jabs this week.  it’s crazy to be able to talk about her using identifying pronouns and think only about girl names – it’s just totally different from the last time around.  and you know i’ve already been shopping for this girl!  i’m really trying to restrain myself, but i am having a hard time passing up leggings.  who knew that would be my weakness??

we are already daydreaming, just like we did with beckett, about what she will look like, sound like, and what kind of personality she’ll have.  we just can’t wait to meet this little nugget.  with everything that happens at the end of the year (plus a little something else we have going on…more on that later), i’m sure january will be here before we know it.  until then, i’ll be happily baking this baby girl.

an early start {and nursery daydreaming}

the sun isn’t up, and yet, i’ve been awake for an hour and a half.  this is not normal.  i am a bit fearful that this baby is going to be a party animal once he/she gets here since i’m already getting no sleep, but i suppose i’ll be fully prepared by the end of january if this charade keeps up.  all this non-sleeping has me day-dreaming about a nursery for little one, who i might add, is really starting to move (more fuel to the fire for the party-animal theory).  i’ve consulted pinterest and every decor magazine i can get my hands on for an idea to spark my imagination of where to go this time, but i’ve not yet been inspired.  i have a few ideas swimming around, but i’m going to keep looking for that inspiration piece to set me down my path.  in the meantime, i’ve been drooling over these darling rooms.

checking in {and catching up}

man, a lot has happened since i last checked in.  first, little beckett isn’t so little anymore – he turned TWO!  we had a little family birthday party to celebrate, and i managed to take about 5 pictures…of inanimate objects.  let’s hope my family members can fill in the gaps for me.  it’s pitiful that i have no pictures of my son at his own birthday party.  it was kind of a cars and trucks theme, so i wanted to document the cute food labels and cake (that my dear sweet mother made!).  trouble is i didn’t document the kid.  dang.

i did, however document him another day last week.  he was having so much fun on the slides at the park, and i had my big boy camera with us, so i was able to freeze time…just for a few minutes.  smiles are a rarity these days since, lately, when i bust out the camera, he gives a dead pan stare or just  looks the other way.  consider these a small win for mama!

happy birthday {to beckett}

i can hardly believe that it has already been a year since i wrote this post and two since our little man entered the world.  time is flying, and i’d like it to slow down right. about. now.

beckett, your speech is really taking off and you are one chatty kathy!  you are stringing more and more words together and making a lot of sense when you speak.  you do still speak in what your mimi calls beckenese, which unfortunately, only you understand.  i know one day we’re going to have an ‘aha moment’ and finally understand what you’ve been saying.  you are a charmer, still saying (or yelling) ‘hi’ to pretty much anyone you see and asking to ‘cheers’ at the dinner table.  you are so active, and really, when i say active – that’s an understatement.  you have two speeds – running or asleep – and there’s not much in between.  right now, i can’t say that listening is your strongest attribute, but we’re working on it.  and you’ve taken up whining as a new hobby, of which we’re not huge fans, but i’m sure this will come and go.  other hobbies include baseball, cars, coloring, and music.  in fact, you’ll pipe up from the back seat of the car and tell us if songs on the radio are acceptable to you or if we need to change the station.  you’re kind of bossy.  :)  you are also inquisitive!  a new favorite phrase is ‘was dat?’  you are asking it all the time about new things you see and hear.  you know pretty much all of your letters, numbers (1 – 12), shapes, and colors.  we are constantly amazed by all you absorb and remember.

you are one special kid, and while it’s bittersweet, we love seeing you change, grow, and learn every day.

an epic project {of teeny proportions}

friends, i’ve been keeping a secret.  i’ve been working on something…really big…but pretty darn small too.

it’s a baby!  i’m growing one!

you’ve probably noticed i’ve pretty much fallen off the face of the earth.  to be perfectly honest, i’ve felt like butt.  i think it’s been a little harder this time since i’m running after a toddler who is 100 mph all the time.  when i was pregnant with b, i was sitting at a desk all day – far different from my current situation.  i feel much better now, but still not quite 100%.  i’ve gotten back to my yoga classes, which has felt so good.  i didn’t even feel up to doing downward dog there for a while.

we are beyond excited to be growing our little family, and this new little person should arrive in late january.  right now, this little booger is the size of an avocado, which seems big already.  things seem to be going much faster this time around.

this is a truly remarkable look at conception to birth, which is a process that never ceases to amaze me.

art projects {for the kiddos}

i recently stumbled onto this blog, and rubyellen has a ton of darling kid’s art projects.  oh my good lord, they’re cute.  she has four little girls, and i love that she’s constantly doing art projects with them.  we are looking for some inside activities considering kc has barely dipped below 100 degrees in what seems like forever.  i think there are even a few projects that b-man could get a kick out of.  here are a handful that i’ve flagged for a test run around here, and here’s the link to all her projects.

a fast dinner {stir-fry}

let me just say, the part of this meal that takes the longest is cooking the rice.  the rest comes together really easily, and our little family thinks it’s pretty darn good.  and if you’re someone who plans meals while at the grocery store or farmer’s market; (me), this is an easy one to adapt to whatever you feel like that day.  also let me say that there is no real recipe here.  just get enough protein and veggies to feed the people in your house, and you can adapt the sauce based on that.

  1. pick a protein:  chicken, beef, pork, shrimp
  2. pick some veggies:  broccoli, bell pepper, carrots, onions, water chestnuts, and bamboo shoots are a few suggestions
  3. sauce:  kraft asian toasted sesame dressing (looks like this) + peanut butter (whatever is in your pantry will work) – to feed four people, you’ll use roughly 1/2 c dressing and 1/4 c peanut butter
